If you are a fan of butterscotch, try these delicious blondies! We love them and they are wonderful with coffee.
Why You Will Love These Butterscotch Blondies
If you love an easy recipe that doesn’t even need a mixer, this is the recipe for you. They come together quickly; you only need one bowl to mix them, and they taste great. This is a versatile recipe, you could easily switch up the chips to peanut butter or chocolate. Use walnuts instead of pecans or leave them out altogether. I feel these are a combination of a brownie and a piece of cake. The texture is somewhere in between.
Tips For Making These Blondies
All ovens vary so you definitely need to watch the time because you can easily over cook them. We like them on the softer side and I have made them in two different ovens and had to adjust the cooking time. We have made them with or without the parchment paper and they worked fine in a greased pan. I have never tried it, but if you wanted a thicker style blondie, you could try making these in a 9X9 and adjusting the cooking time.

You Can Add a Frosting or Glaze
If you like, you can also add frosting or a glaze to these blondies. I definitely think a powdered sugar glaze would be delicious on this recipe or a cream cheese frosting. You could also just sprinkle some powdered sugar on them if you think you want to add a little something.

- 1 cup of butter melted
- 1/2 cup of brown sugar light or dark
- 1/2 cup of white granulated sugar
- 2 eggs
- 1 teaspoon of vanilla
- 2 teaspoons of baking powder
- 1/2 teaspoon of salt
- 2 cups of flour
- 1/2 cup of butterscotch chips
- 1/2 cup of pecans
Preheat oven to 350 degrees. Line a 9X13 baking dish with parchment paper. Combine melted butter, brown and white sugar in a bowl. Mix with spoon.
Next add in, eggs, vanilla, salt, baking powder and flour. Continue to mix with a spoon until combined. Next fold in butterscotch chips and pecans. I didn’t use a mixer when I made this and it worked really well.
Next press mixture into your 9X13 dish. Bake for 25-30 minutes or until center test done. These are a mixture between a brownie and a piece of cake
Please check these blondies around 25 minutes as all oven vary.
